| Abstract: | The paper examines issues related to improving the quality indicators of juice during evaporation in an evaporator. The main approaches to determining the evaporation time in the evaporator and its impact on juice quality indicators are considered. The main ways of increasing the efficiency of control of the evaporation plant operation according to time indicators are proposed. |
