| Abstract: | An improved design of a scraped heat exchanger for heat treatment of fruit and berry puree is considered. The uniformity of heating and the dependence of the thickness of the liquid layer on the shaft rotation frequency are investigated. It is established that the modernized device reduces specific energy consumption by 1.5 times (172.4 kJ/kg) compared to traditional heaters. A structural scheme is proposed to increase the efficiency of the process. |
