Краткий осмотр (реферат): | Розглянуто розвиток індустрії ресторанного бізнесу за період 2010–
2016 років. Проведено аналіз розподілу підприємств ресторанного
господарства за видами закладів. Прослідковано динаміку зміни
товарообороту підприємств ресторанного господарства. Виявлено сучасні
тенденції розвитку ресторанного господарства в Україні. The development of the restaurant business industry for the period of 2010–2016 is considered. The analysis of the classifying restaurant business enterprises by the type of organization was carried out: restaurants, bars, cafes, snack-bars, refreshment rooms and canteens. Restaurant business enterprises operate in the open system of external environment which directly or indirectly affect the conditions of its existence, it has ambiguous power and nature of impact on the formation of competitive relations at the restaurant business market. The causes of decreasing the number of restaurant business enterprises in Ukraine for the period of 2013–2014 are considered. Thus, the annexation of the Crimea, warfare in Donbas, the fall of hryvnia rate had negative impact on the development of the restaurant business industry. The situation at the restaurant business market in 2015 has improved. At that time in Ukraine a certain stratum of the population that eats out was formed, and their number has ceased to reduce. Conceptual enterprises with author’s cuisine gained popularity and the proportion of the establishments that have focused on local cuisine have started to decrease. The dynamics of change of the turnover of restaurant business enterprises as an important factor of ensuring sustainable economic development of the entire industry was investigated. Analysis of the total volume of trade turnover is conducted simultaneously with the analysis as to the circulation of own production products and the volume of dished output. The results of the analytical studies are presented in tables, charts and bar graphs. Positive trends of developing restaurant business in Ukraine are revealed. Despite the general downward trend in the number of enterprises restaurant business, which is due, above all, the general economic crisis in the country and pointed as the field of restaurant services, which can be explained by the active entry into the market of restaurant business Ukraine international corporate networks, it should be noted the great prospects for national restaurant chains due to incomplete saturation of the market and the absorption of individual establishments catering business. The prospect of further research is perceived in the investigating the state of restaurant business development in the context of trends that will arise in the coming years and the forming the strategy of development in terms of economic reforms. |
