Abstract

В работе исследованы роль и опыт мировых солодовых корпораций по внедрению системы управления пивоваренным качеством ячменя на этапах формирования и развития сырьевой базы современного солодового производства в Украине. Раскрыта сущность понятия пивоваренное качество ячменя и всесторонне освещены современные требования к качеству зерна пивоваренного направления использования. Выяснены региональные факторы влияния на качество ячменя. Обосновано определение пивоваренного качества зерна как экономической категории, которая формирует его дополнительную стоимость на всех этапах цепочки физиологических и биохимических преобразований от ячменя до солода и пива. Внедрение интегрированной системы управления качеством солодовыми корпорациями в сфере производства ячменя пивоваренного назначения - это материализация инновационной идеи утверждения принципиально новых, усовершенствованных, более ответственных и взаимовыгодных отношений с сельхозтоваропроизводителем, которые создают условия для повышения эффективности выращивания ячменя, росту его конкурентоспособности и расширению экспортных возможностей на мировом рынке.

Radically modernized by foreign and domestic investors production facilities of malt production in the brewing industry in Ukraine began to work according to world standards, which in turn required from the farmer raw materials - malting barley at the level of European quality requirements. Ukrainian barley, which came from the local market by selecting "the best we have", had the status of conditionally brewing, because most of its quality indicators did not even meet the requirements of DSTU, not to mention the European ones. The requirements of DSTU did not exactly coincide with the modernized standards of the brewer, because their indicators did not reveal even the minimum of important malt properties of barley. Due to the lack of specialized programs in Ukraine of state, industry or any commercial support for the producer of malting barley, the main players in the malt market - Malteurop, Soufflet, Obolon took responsibility for solving the problem of forming the raw material base, which will be based on the production of high quality barley. Using the scientific works of scientists, experience of managers of foreign companies, data from analyzes of specialized micro malt laboratories and leading breeders, the authors of the article investigated the role and experience of world malt corporations in implementing barley quality management system at the stages of formation and development of modern malt production in Ukraine. The essence of the modernized concept of brewing quality of barley is revealed and the modern requirements to quality of barley of a brewing direction of use are comprehensively covered. Regional factors influencing the quality of barley have been clarified. The definition of brewing quality of grain as an economic category, which forms its additional value at all stages of the chain of physiological and biochemical transformations from barley to malt and beer, is substantiated. The introduction of an integrated quality management system for malting corporations in the production of malting barley is a materialization of the innovative idea of approving fundamentally new, improved, more responsible and mutually beneficial relationships with agricultural producers, which create conditions for improving the efficiency of barley cultivation, increasing its competitiveness and expanding export opportunities in the world market.
