Інтегрований підхід до управління розвитком підприємства ресторанного бізнесу

Abstract

У статті охарактеризовано основні напрямки (прогресивний, регресивний, стабільний) та види розвитку підприємства ресторанного бізнесу: конвергенційний (адаптивний), дивергенційний (слабкоадаптований), синхронізований та десинхронізований. З метою забезпечення ефективності діяльності підприємства ресторанного бізнесу запропонований інтегрований підхід до управління розвитком на різних рівнях управління:стратегічному, тактичному та оперативному. Аргументовано доцільність управління процесом розвитку підприємства ресторанного бізнесу на основі циклу PDCA, який створює можливість об’єднати окремі ініціативи в цілісну програму з внутрішніми зв’язками. запропоновано інтегровану модель управління розвитком підприємства ресторанного бізнесу, практична реалізація якої створює можливість вчасного виявлення факторів, причин та оцінки наслідків відхилення від цільового вектору стратегічного розвитку. The article defines the major directions (progressive, regressive, stable) and types of development of the restaurant business enterprise: convergent (adaptive), divergent (weakly adaptive), synced and unsynced. In order to provide the performance efficiency of the restaurant business enterprise it is justified, that the right choice of the development factors is the source of providing high effectiveness of their activity and proper identifying of the competitive behaviour. Taking into account the development complexity, there is proposed the integrated approach to development management at its different levels: strategic, tactic and operative. This approach is graphically presented in 3d space, where the directions of certain decision making loops are defined; it demonstrates the holistic framework of interrelated processes of different levels of management development of restaurant business enterprises. It is justi- fied, that it is necessary to conduct the workflow resources management at set requirements of functioning the restaurant business enterprise to provide the development effectiveness. The expedience of the development management of the restaurant business enterprise is reasoned in the basis of the PDCA cycle (Plan¬Do¬Check¬Act), which creates the possibility to unite different initiatives to the coherent program with internal connections. It is defined, that the advantage of the approach of development management of restaurant business enterprises in the basis of PCDA cycle is a capability for optimal and productive management of requirements of the restaurant business enterprise’s activity and the workflow resources under set requirements. In order to justify the establishment of the main requirements to the development management system of the restaurant business enterprise, the integrated model is proposed. Practical implementation of the integrated model of the development management of the restaurant business enterprise allows identifying and assessing the factors, reasons, consequences and changes, which influence on the success in achieving targeted strategic benchmarks and create the possibility to unite different initiatives to the coherent program for their management.
