Інноваційні аспекти розвитку підприємств ресторанного бізнесу

Abstract

Статтю присвячено огляду сучасних інтерактивних інноваційних технологій розвитку підприємств ресторанного бізнесу. Обґрунтовано необхідність розроблення та впровадження інноваційних рішень, реалізація яких дасть змогу здобути довіру клієнтів і сприятиме формуванню позитивного іміджу й репутації підприємства ресторанного бізнесу. З метою інтегрованого підходу до розвитку підприємств ресторанного бізнесу з урахуванням їхньої галузевої специфіки сформовано комплекс інновацій за напрямами: інноваційні концепції та формати, інноваційні технології в організації виробництва, інноваційні методи обслуговування, інноваційні комп’ютерні та віртуальні системи. Охарактеризовано можливі напрями інноваційного розвитку підприємств ресторанного бізнесу на основі застосування мобільних додатків у віртуальних об’єктах та інтерактивних технологій, RFID-технологій, QR-коду, інноваційних новітніх технологій у приготуванні та оздобленні страв, систем автоматизації front office та back office. The article is devoted to the study of modern interactive innovative technologies of the development of restau- rant enterprises. It is substantiated the need to develop and introduce innovative solutions whose realization make it possible to gain confidence and to contribute to the formation of positive image and goodwill of restaurant en -terprises. The paper argues that innovations permit to promote restaurant enterprise uniquely, to improve internal process and restaurant products, to modernize restaurant concepts. To use the integrated approach to the de- velopment of restaurant enterprises, taking into account their branch specifics, the author formulates a complex of innovations according to the areas of focus: innovative concepts and formats, innovative technologies in work organization, innovative service methods, innovative computer and virtual systems. The author characterizes the promising opportunities of innovative vector for the development of restaurant enterprises based on the use of mo- bile applications to cosy up to consumers and increase their loyalty to the restaurant enterprises. The dominant ad- vantages of mobile applications were determined: ease of market penetration, audience outreach, direct interaction between the client and the restaurant enterprise, disintermediation as well as the opportunity to optimize the costs of both the consumer and the restaurant enterprise. It is characterized the benefits and possible sunrise functional branches for the introduction of RFID-technologies in the activities of restaurant enterprises. The paper proves the expediency and substantiates the advantages of QR-code as an effective “advertising trick” of the restaurant enter- prise. It is considered the latest innovative technologies for cooking and plating, which can change the concept of gastronomy and provide the restaurant enterprise with unique competitive strengths. The determinants of modern software products, which raise the possibility of control over the process of managing the financial and economic activities of the restaurant enterprise, optimization of available product, cash flow and time consumption, allow improving the quality of internal services.
